What you will need:

Fresh Ginger (1 Piece)

Asian Chile Paste (120 ml)

Rice vinegar (60 ml)

Soy Sauce (60 ml)

Can of black beans

Garlic (One Head)

Sesame Oil (60 ml)

Sugar (175 ml)

Boneless pork should roast (1.5 kilograms)

  1. Chop the beans
  2. Food process garlic, ginger, black beans, chili paste, sugar, sesame oil, soy sauce, and rice vinegar
  3. Pound the pork and cover with the marinade. Let it sit overnight.
  4. Grill on moderate heat, turning every couple of minutes.

Whisky Ribs

Enjoy juicy savory ribs with this delicious recipe.

What you will need:

1 kilogram of baby back pork ribs

Black pepper (10 grams)

Red Chile pepper (15 ml)

Vegetable oil (40 ml)

Onion, chopped (114 grams)

Water (1/3 Liter)

Tomato Paste (118 ml)

White vinegar (118 ml)

Brown Sugar (114 grams)

Honey (120 ml)

Worcester Sauce (15 ml)

Salt (10 grams)

Liquid Smoke (10 ml)

Whiskey (10 ml)

Garlic Powder (10 grams)

Paprika (2 grams)

Red Chili Pepper (1 gram)

Onion Powder (1 gram)

Dark Molasses (120 ml)

Ground Chili pepper (5 grams)

  1. Add salt, black pepper, and chile pepper on ribs.
  2. Wrap ribs in aluminum.
  3. Bake at 300 degrees for two and a half hours.
  4. Mix all ingredients except ribs in a medium saucepan for the marinade. Simmer for 1 hour.
  5. Remove ribs from foil and place on grill.
  6. Grill ribs four minutes per side.
  7. Add sauce while grilling after five minutes.
  8. Serve with additional marinade brushed on.

Mexican Corn

Grilled corn is a great side to any delicious dinner. Try these scrumptious vegetables next time you entertain.

What You Will Need:

8 ears of Corn

Mayonnaise (188 ml)

5 grams Chile Pepper Ground

1 gram Paprika

1 lime

Butter (57 grams)

Grated Cotija Cheese (Parmesan will substitute) (120 grams)

  1. Preheat the grill, lightly brushing with oil.
  2. Mix lime juice, chili powder, paprika, mayonnaise until smooth and store in the fridge.
  3. Boil corn in salt water for several minutes.
  4. Drain.
  5. Grill corn for a few minutes, turning until are brown with caramelization.
  6. Brush with butter and mayonnaise mix.
  7. Sprinkle cheese over grilled corn.

Regular Maintenance

Basic cleaning is minimal. If you just bought your new grill at a BBQ grill sale, then you can maintain the grill with a basic cleaning each time you cook. Do a major seasonal scrub-down with a stainless steel grill brush. Clean the grates and racks after every use. Brush of any residue then scrape the grates with a scraper tool.

Two combustible fuels (charcoal or wood) and oxygen determine the temperature of the grill. Learning how to control the temperature is a key to learn the ins and outs of grilling for beginners. Most grills have two oxygen controls: the intake damper and the exhaust damper. The intake damper brings oxygen to the grill fire. The exhaust damper exhaust gas and pulls in oxygen through the intake dampers.

The Intake Damper vs. The Exhaust Damper

The intake damper provides the charcoal or wood with oxygen. If you close off the intake damper, you starve the fire, causing it to burn out. Open it entirely and the temperature rises. The exhaust damper allow combustion gases to escape. It also pulls in the oxygen. Avoid closing the exhaust damper all the way. Otherwise, you might just smother your fire.

As you learn how to use the dampers to reach key temperatures (usually between 225-325 F or about 105-160 C), try to only work with one vent (the intake damper). If you need practice, try reaching the right temperatures without any food.

What if I can’t Reachthe Right Temperature?

 If you are still having problems reaching the correct temperatures after a few dry runs, a leak may be the issue. On less expensive grills that do not have tight seals, oxygen can enter and escape. Offset smokers often have this issue. Food safe silicone might be able to tame leaks, but you may need a professional to look at your grill if this continues to be an issue.

Yearly Cleaning of Grill and Burners

Much of the grime and wear and tear of grills comes from burnt food, ash, grease, and soot that has been left to crust on too long. Repaint the exterior of your grill. Once a year you should don some rubber gloves, pull out your shop vac, and clean out the grill. Learning how to refurbish a gas grill is simple. Vacuum any loose grime and particles. Remove the burners and vacuum again. Then pick up a wire brush and carefully scrape the gunk.
